1. Start with Quality Ingredients:

I find that using strong white bread flour often yields the best results. This is because there is a higher proportion of gluten in the flour which provides the dough with that all important structure it needs to trap the carbon dioxide bubbles inside your dough as the yeast ferments. This makes for the fluffiest kind of texture and you know when you’ve got it right because you’ll have an elastic, stretchy dough which almost looks like spiderwebs when you tease it apart.
2. Love your Yeast:
Too much yeast can cause the bread rolls to rise too quickly and become dense. Too little yeast will cause the rolls to be dense and not rise properly. Yeast is alive, and requires warmth, food, moisture and time. Use the amount of yeast specified in the recipe for best results – the sachets are usually ideal. Make sure that you don’t add salt directly to the yeast – pop it to the other side of the bowl so that it doesn’t kill it off. I often add my yeast to water with a small spoonful of sugar just to get it started – you will see foamy bubbles and know it’s happily fermenting away. Ensure that your water (or liquid) is warm but not scalding. Think warm bath temperature. Any hotter and the yeast will not like it and if it’s too cold it wont even begin to ferment either.

Covering a bowl with clingfilm helps, and I often pop my dough in the top grill space ( making sure it’s off) above the pre heating oven. If you have a sunny window sill or a cosy airing cupboard these are also ideal. This will help the dough to double in size and become light and fluffy. If you really do not have the time for this then you can do a cold proove. This means not preheating the oven so that the dough has a little time to rise before the oven reaches the temperature which sets the dough in to place. You won’t get as fluffy a bread roll but it does help.
5. Bake at the Right Temperature:
Baking the rolls at the right temperature is essential for achieving the perfect texture. This will ensure that the rolls are soft and fluffy on the inside and golden brown on the outside. Adding a little egg wash or milk for the can help with the colour too. Always follow a recipe and trial it at home in your own oven several times to perfect it – I always keep bread on the middle shelf of the oven too.
